"With the passage of the years I realise that it’s very important to farm and to produce our wines in a way that is sustainable over generations. That means improving our soil health through increasing organic matter, leaving no chemical residues & not degrading other environments such as river systems through irrigation. So we farm our vineyard organically and we don’t irrigate our vines. There is a cost in yield potential to this approach but a benefit to grape quality and sustainability." Drew Noon
"Grapes for the Noon Reserve Cabernet have been sourced from the Borrett family vineyards in Langhorne Creek since the first Reserve Cabernet was produced in 1996. The Fruit Trees and Main Road blocks which provide the grapes for this wine are planted on deep alluvial soil, with enough clay to retain good moisture and in a site cool enough to ensure slow ripening and high flavour development.
Noon Reserve Cabernet is an unabashedly full-bodied, riper style of Cabernet Sauvignon, emphasising pure blackberry and cassis fruit over herbal characters. It is made from fully ripe grapes, resulting in a complex, generous wine that is beautifully structured for long-term cellaring. If you prefer elegant, light-bodied reds, this may not be the wine for you—but for lovers of bold, traditional Australian reds, it is a benchmark." Winery Notes
