Hand-picked. Gently basket pressed using whole bunches, just as if making a white wine, for minimal colour extraction. A small percentage of Saignée (drained off juice) used in the blend to add some depth of flavour without overwhelming the finesse we are striving for. Cool Fermentation, followed by maturation in tank on lees, stirred for 4 months. Bottled August 2022.
